Thai Curry Soup

A little bit of Thailand made easily in your own kitchen. The flavors in this soup are distinct, aromatic and subtle.

1-2 tablespoons vegetable oil
1 onion, sliced in thin wedges
2-3 cups fresh mushrooms, sliced
1 red bell pepper, diced
3 cloves garlic, minced
1 1/2 teaspoons ginger, minced
1 teaspoon red curry paste
4 cups chicken broth
1 1/2 cups chicken, cubed
1 tablespoon brown sugar
1 1/2 tablespoons fish sauce, optional
1 tablespoon cornstarch
3 tablespoons cold water
1 can coconut milk
10-12 oz fresh spinach leaves
2-3 tablespoons cilantro, chopped
