The Yummiest Italian Chicken Spaghetti Squash


You won't even miss the carbs with the healthy, cheesy Italian chicken goodness!

-1 spaghetti squash
-1 large zucchini or 2 smaller ones cut into half moons
-Half a yellow or white onion diced
-2 cups of fresh spinach
-2 chicken breasts cut into bite size pieces
-1 can of tomato sauce (14.5 oz)
-2 tablespoon of olive oil divided
-1 tablespoon of fresh minced garlic
-2 teaspoons Italian seasoning
-salt and pepper
-1 cup shredded mozzarella cheese divided
-1/2 cup fresh Parmesan cheese
Preheat oven to 425 Cut spaghetti squash in half length wise and remove seeds. Drizzle half of the olive oil on the inside of the squash and sprinkle with salt and pepper. Place squash cut side down on a tin foiled pan cover pan. Cook for 40-45 min While spaghetti squash is cooking, heat other half of olive oil up in a medium sized skillet over medium high heat. Place your garlic in the olive oil and cook until fragrant. Chop up your onions and zucchini and place in the oil and garlic. Place spinach leaves in the pan. Cook for 5 min or until veggies are tender and spinach is wilted. Add your chicken. Cook until the chicken is no longer pink. Dump the can of tomato sauce into your pan and add Italian seasoning and half the mozzarella cheese. bring to a simmer and continue to cook for 5 more minutes. Take spaghetti squash out of the oven and shred the inside with a fork. Divide the tomato sauce mixture in half between the 2 pieces of squash and spoon into the shells. Sprinkle the parmesan cheese and the rest of mozzarella cheese over the top of the mixture. Place back into oven and cook for another 5-10 minutes in the oven or until cheese is melted and bubbly. Remove from oven and enjoy this healthy dinner!
