Tofu Vegetable Lasagna

This is a variation on the lasagna my mom made for us growing up. My family is vegetarian, so she uses tofu for the filling instead of meat. I wanted to add some vegetables, so I incorporated that into this already wonderful recipe! I had a bunch of friends over, half vegetarians and half meat-eaters, and everyone loved it!

1 12 oz package of firm tofu
1 tbsp olive oil
1 tsp minced garlic
1 tsp Italian herb seasoning
Salt and Pepper
1 24 oz jar of pasta sauce of your choice
3 cups water
1 package of shredded mozzarella
3 zucchini, thinly sliced lengthwise
2-3 cups baby spinach leaves
10-15 fresh basil leaves
Parmesan cheese, for topping.
