Nutrient and flavor-packed turkey meatballs

2 lbs ground turkey
2 eggs
1/2 cup minced onion
1/4 cup minced carrot
Handful of fresh spinach, chopped
1/2 cup of your favorite veggie (I use raw asparagus)
2 T. Dijon mustard
1 T. olive oil
1/2 cup bread crumbs or 1/4 cup cornstarch
salt and pepper to taste
