½ cup tomato paste
4 cups beef broth
1 teaspoon dried thyme
1 tablespoon dried parsley
1 teaspoon oregano
2 pounds beef stew meat, (cut into bite-sized pieces)
1 tsp salt
1 tsp pepper
2 tbsp olive oil
2-3 cloves of garlic, minced
1 tbsp fresh parsley, chopped
