Umami Broth with Wontons

Umami Broth with Wontons is a bowl of sweet, salty, bitter, and sour balanced flavors that will warm your soul any day of the week!

For Broth:
8 cups water
32 oz (4 cups) vegetable broth (I use Pacific brand)
4 carrots, peeled and cut in half
1 bunch green onions, cut in half
1 large sweet onion, peeled and cut in half
3 cloves garlic, peeled and left whole
8 oz shitake mushrooms, dried or fresh (I used fresh), cut in half
4 nori sheets
¼ cup rice wine vinegar
¼ cup soy sauce
4 tbls fish sauce (optional)
½ tsp black pepper
1 tbls sesame oil (set aside)
2 cups shelled edamame (set aside)
shrimp shells, leftover from shrimp wontons (optional)

For Wontons:
Wonton wrappers (I used small square)
½ lb raw shrimp with shells, deveined and diced
½ tbls soy sauce
¼ tsp sesame oil
3 tbls green onions, diced
For Broth: Add all ingredients, except for sesame oil and edamame, into a large stock pot and simmer for 3 to 4 hours and make wontons in the meantime Strain broth and add back into large stock pot and...
