Vegan Christmas Mince Pies

Here’s another easy-to-make dessert recipe for Christmas. These mince pies are completely vegan and suitable for a low-fat diet too. I used einkorn flour to make the crust of my pies, but you can use spelt or any other flour you have. If you want to make them gluten-free, you can use a mix of rice flour and buckwheat flour, or oat flour. Also, I used dates in both the crust and the filling of my mince pies, so I didn’t need to add any additional sweetener.
For the crust
8-10 dates
1/3 cup of water
2 cups of einkorn flour
Cinnamon to taste
For the filling
1 large apple
2/3 cup of dried fruit (I used dates, cranberries and cherries)
The juice from one medium orange
Orange zest or candied orange peel
Walnuts – optional
Cinnamon
Anise – optional
Ginger – optional
