For the sauce:
1 cm fresh ginger, grated
4 tablespoons soy sauce (or tamari if gluten-free)
4 tablespoons mirin (or sub 1-2 tablespoons any sweetener)
Ground black pepper, to taste
For the tofu:
400 g (14oz) firm tofu
2 tablespoons rapeseed or vegetable oil
1 leek, thickly sliced
