Vegetable Fried Rice is a super quick and healthy dish; change it up by adding some leftover chicken, or whatever is in your refrigerator, just keep it easy!

1 Tbsp. Grape seed, peanut, or canola oil
1 Small onion, small dice
1 Carrot, small dice
½ Red bell pepper, small dice
1 ½ cups Broccoli; cut into small, bite sized pieces
4 oz. Water chestnuts, diced small (a can is 8 oz.)
2 cups Leftover cooked rice
1 cup Fresh spinach, chopped
2 Tbsp. Soy sauce, low sodium
2 Eggs, beaten
1 Small onion, small dice
1 Carrot, small dice
½ Red bell pepper, small dice
1 ½ cups Broccoli; cut into small, bite sized pieces
4 oz. Water chestnuts, diced small (a can is 8 oz.)
2 cups Leftover cooked rice
1 cup Fresh spinach, chopped
2 Tbsp. Soy sauce, low sodium
2 Eggs, beaten
1. Heat the oil in a large skillet (or a wok) over medium high to high heat.
2. Add to the hot oil, the onion and carrot. Cook and stir for about 1 to 1 ½ minutes.
