Everybody should know how to make veggie fried rice. Hands down one of the most delicious and easiest ways to use up leftovers. Ready in max. 12 minutes!

For the sauce: 2 tbsp dark soy sauce, 2 tsp vinegar (eg. white wine vinegar), 2 tsp olive oil (or any other oil you have at hand), 1 teaspoon maple syrup
For the fried rice: 2 medium eggs or 1 large egg, beaten. vinegar, salt to taste, 2 tbsp oil , 3 cups of cooked rice, 1 onion, finely chopped (or 2 spring onions), 2 cups of veggies of your choice
