Vegetarian Morocan Chickpea Chili

Deceptively simple, this recipe has a unique flavor and is great for a weeknight meal.

1tbs EVOO
2 cloves garlic, minced
1 medium yellow onion, chopped
2 medium carrots, chopped
3 medium celery stalks,chopped
1 medium green bell pepper, chopped
1 tbs ground cumin
2tsp coriander
1tsp mustard
1tsp turmeric
1tsp paprika
½ tsp cayenne pepper
1tsp black pepper
1 can chickpeas, drained
3 cups vegetable broth
1 cup frozen corn
2 medium tomatoes, chopped
1 bay leaf
1 6-oz jar of tomato paste
1 lemon (optional)
1 tbsp cilantro chopped (optional)
