Sneak extra veggies into your family’s diet with this Veggie Loaded Easy Cottage Pie. It’s simple to prepare and even tastes great as leftovers the next day.

For the Topping
1.5 pounds (680g) starchy potatoes
1 pound (450g) cauliflower florets
¼ cup (60ml) low fat milk
2 tablespoons butter
For the Filling
1 large onion
2 large carrots
1 large parsnip
1 tablespoon oil
1 pound (450g) lean ground beef
2 tablespoons tomato puree
½ cup (125ml) beef or chicken stock
1 (15 ounce/425g) can chopped tomatoes
½ - 1 tablespoon Worcestershire sauce (or alternatively soy sauce)
2 tablespoons ketchup
1 cup (150g) frozen peas
Salt and pepper, to taste
