Veggie Stuffed Acorn Squash Melange Chopped

Serves 4: Easy Roasted Acorn Squash recipe. Vegetarian option. Chopped ingredients go farther. "Get Your Spoons Ready!"

Preheat oven to 400 degrees

Baking Sheet Ingredients:
2 Acorn Squash, halved and seeded
1 Red Pepper, Chopped
1 Medium Zucchini, Chopped
1 teaspoon ground Cumin
1 teaspoon Kosher or Sea Salt
2 teaspoons Olive Oil, divided

Bowl/Pan Ingredients:
1 cup Chopped Red or Brown Onion
2 Garlic Cloves, finely Chopped
1/2 cup canned White Beans with 1/4 cup reserved liquid.
16 Medium Shrimp. Shelled, deveined, tail off and Thirded
1/2 cup cooked Quinoa
1 Tablespoon Olive Oil
1-2 Tablespoons Red Wine Vinegar. Check for taste after adding one T.
1 teaspoon ground Cumin or more to taste
1/2 cup Grated Smoked Gouda or Cheddar Cheese, divided
4 cups Chopped Swiss Chard. Kale would be a healthful option
Kosher or Sea Salt to taste
Freshly Ground Black Pepper, to taste

Zing Factor:
1 teaspoon Molasses. This adds a hint of smokey sweetness
Baking Sheet Ingredient Prep: I used 1 sheet for the Acorns and 1 for the Veggies. Lightly coat the halved and seeded Acorn with Olive Oil. Sprinkle it with Salt and Cumin and place on sheet cut side...
