Very Easy lamb Kebabs

Kebabs are very popular in the Middle East and Indian Sb continent.This in particular is a Greek inspired recipe using lamb marinated in yogurt.The best way to cook kebabs is on a charcoal BBQ,but an ordinary grill can be used satisfactorily.The results are amazing anyway.

3/4 -1 kilo lean lamb(from the fillet end of the leg) , cut into small cubes
1 150 gm Natural plain yogurt tub
Juice of 1 lemon
1 tbsp olive oil
salt and black pepper crushed for taste
4 sprigs of rosemary or marjoram
4 lemon wedges
1/4 small white cabbage,shredded
1/2 small onion,peeled an sliced
12 black olives stoned
6 tbsp olive oil
2 tbsp lemon juice
4 cherries to garnish
Put the lamb in a large mixing bowl.Add the yogurt,lemon juice and olive oil and season well.Stir to mix,then chill in the refrigerator for several hours,preferably overnight.Stir form time to time to ensure the lamb is evenly coated in the marinade. Thread the lamb onto 4 skewers.Prepare the charcoal BBQ and when hot,lay the rosemary or marjoram sprigs on the grid.(if using the cooker grill,lay the herbs on the grill pan).BBQ or grill the kebabs,according to taste,turning and basting occasionally with any marinade left in the mixing bowl. Combine the salad ingredients in a mixing bowl and season well to taste.Arrange on a serving platter.Place the hot cooked kebabs over the bed of salad,garnish the four corners of the platter with 4 cherries and and serve immediately with lemon wedges.
