A quick beautiful side dish salad that accompanies any meat well. It's easy enough for a weeknight but elegant looking enough for you holiday table. Perfect for the spring and Easter.

1/8 C Pine Nuts
1 T Canola Oil
5 oz Snap Peas, halved at an angle
2 Green onions, sliced
2 Garlic cloves, minced
2 T Cilantro, freshly chopped

2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
