3¼ tablespoons Vegetable oil
2 lb Onions, peeled, diced
1 lb Celery, diced
2 lb Carrots, diced, fresh or frozen
2 Tb Garlic, minced
7 quarts Vegetable stock or water
3 tsp Soy sauce
1 tsp Hot pepper sauce
2 tsp Basil, dried
2 tsp Thyme, dried
2¼ cups Barley, dry
3¾ lb Canned white beans, rinsed and drained
