White Christmas Chili

Award-winning white chicken chili made festive with red and green peppers and garnished with fresh cilantro. It is merry for the mouth!

3 TBS oil
4-6 cups chopped cooked chicken breast
1 cup chopped onion
4 cloves garlic, minced
3 cups chicken broth
4 TBS fresh lime juice
2 cans diced green chili
1 red bell pepper
1 tsp cumin
1 tsp dried oregano
1 tsp red pepper sauce
1 tsp salt
2 cans white shoepeg or whole kernel corn, drained
2 cans garbanzo beans, drained
1 can cannellini beans, drained
1 can great northern or kidney beans, drained
1 can butter beans , drained
fresh chopped cilantro
4-6 cups chopped cooked chicken breast

Heat oil in stock pot over medium heat. Saute chicken, onions, garlic and peppers in oil, stirring occasionally, until onions are tender and chicken is cooked through. Stir in remaining ingredients. Heat to boiling; reduce heat. Simmer uncovered 20 minutes. Add fresh cilantro right before eating. *You can use any type of bean you like. * The lime, red pepper sauce and the cilantro are the winning secret ingredients.
