Whole-wheat Cous Cous, Date and Coriander Lettuce Wraps

This is my kind of meal. It is simply too good for words. Light with an intricate flavour combination; it is more than moreish and, best of all, it is bursting with health giving ingredients. A quick meal option that requires little effort to throw together. Enjoy!

1 cup whole-wheat couscous
350ml boiling water
Pinch salt and freshly ground black pepper
1 tsp ground cinnamon
½ tsp ground ginger
Zest and juice from 1 lemon
1 spring onion, thinly sliced
12 dates, chopped
20 almonds, halved
1ml tabasco sauce
15ml olive oil
2 tsp fresh mint, finely chopped
16 large sprigs coriander, roughly chopped
2 oranges, segmented
2 large iceberg lettuce leaves
