A healthy homemade version of quesadillas!

For the Tortillas
1 cup whole wheat flour, 1-2 tbsp margarine/butter/earth bal/oil, 1/2 tsp baking powder, 1/4 tsp salt, 1/3 cup warm water

For the Quesadilla
1 chicken breast (cooked and diced), 1/2 red pepper, 1/6th red onion, 2 celery stalks, 4th cup mozz/cheddar low fat cheese blend
Mix dough ingredients in a bowl. Roll dough into 4 balls. On a flour surface, roll out each ball with a rolling pin until they are very thin and circular. Place on a frying pan for 30 secs either side. ...
