Winter Cookies

I called them winter cookies because they remind me of winter and Christmas, but they're absolutely welcomed at any time of the year. Incredible crispy, but yet so soft cookies your kids will LOVE!

1 1/4 cups lard
15 tablespoons sugar
10 tablespoons milk
2 eggs
2 1/2 teaspoons baking powder
7 cups flour
1. Mix lard and sugar until combined. The sugar don't have to be fully melted. Mix just enough to get a homogeneous mixture. 2. Add milk, one whole egg and one egg yolk and miy again. Keep the egg white for later. 3. Add baking powder and than add flour gradually while kneading the mixture with your hands. You may need a bit more or less flour, depending of the flour itself. Knead and add flour until you get a non-sticky dough that can be easily rolled. 4. Preheat oven at 200 degrees. 5. Roll the daugh with a rolling pin until it's about 1/5 inch thick. It's not necessary to sprinkle flour over the working surface as the dough itself is greasy enough.Cut cookies using cookie cutters at your convenience at lay them in a baking pan. 6. Beat the egg white with a fork and coat each cookie with a pastry brush. Bake for about 10-12 minutes until they start browning. 7. Re-knead the remaining dough , roll it again and cut cookies. Repeat the procedure until you use all the dough. Notes: - You can get up to 100 cookies from these ingredients. It all depends from the cookie cutter size. - To make it more diverse and more colorful, before you add the flour you can add some instant chocolate powder, any flavour of pudding powder, food coloring, etc. The rest of the procedure is the same.
