Healthful ingredients abound in the "Fall" Veggie inspired Chopped.

Baking Sheet Ingredients:
1 Small Yam, Chopped. About 1 cup of cubes. I usually make more, so I have leftovers for the next Chopped.
1 Fennel Bulb, Chopped. Save some fronds for the Dressing Zing Factor
1 cup Green Beans, Chopped
2 teaspoons Olive Oil
1/4 teaspoon Kosher or Sea Salt or to taste
A few grinds of Black Pepper

Bowl Ingredients:
10- 12 oz. cooked Chicken, Chopped
1 cup cooked Quinoa
4 cups finely Chopped Kale. The finer you chop it, the less bitter it tastes.
1/4 cup Chopped Red Cabbage
2 Green Onions, Chopped
1/2 Avocado, Chopped

Chopped Style Dressing Ingredients:
1 Tablespoon Olive Oil
1 Garlic Clove, finely Chopped
1/2 teaspoon Molasses
2 Tablespoons Sherry Vinegar
1 teaspoon Dried Rubbed Sage or 1/4 teaspoon Dried Ground
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste

Zing Factor:
1 Tablespoon Chopped reserved Fennel Fronds
