Zucchini pasta, people. It’s for real! And there’s nothing quite like taking a mouth full of something rich & avocadoy without any of the heavy cream guilt. This recipe combines a few of my favorite all-stars: something that represents pasta that tastes divine + good-for-you fats + mounds of veggies. 2 chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
4 small zucchini, ends trimmed & spiralized with a julienne peeler
1 avocado
½ a cucumber, chopped
juice of ½ a lemon
1 clove garlic
2 tbsp almond or coconut milk
8 leaves of fresh basil
salt & pepper

Heat the olive oil over medium heat & add the chicken pieces. Cook all the way through, until the chicken is no longer pink in the center.
