Portabella Rice Burger

Simple vegetarian burger.

2 big portabella
2 small bowls of cooked white rice
1 tablespoon olive oil
1 tablespoon soy sauce
½ tablespoon balsamic vinegar
½ teaspoon brown sugar
¼ cup water
¼ cup chopped tomatoes
1 teaspoon grated ginger
1 tablespoon chopped green onions

Wipe portabella clean with a wet towel. Remove the stem and scoop out the gill.
Heat olive oil in a big skillet, then add portabellas, sauté each side for about 1 minute.
Add soy sauce, balsamic vinegar, brown sugar and water. Cook over low heat for 4-5 minutes, until portabellas are soft. Add more water if liquid evaporates too much.
Prepare a serving plate. Place a round cookie cutter in the center of the plate. Put rice inside the cutter and press down. Remove the cookie cutter and place a portabella on the rice. Repeat for the other burger.
Mix tomato, ginger and green onions. Divide into two equal portions and put on top of each portabella.
(Optional) Serve with lettuce or salad greens.
