Sweet Pea Wrap Filling

Use it with noodles, rice, or wrap.

1 tablespoon olive oil
1 bell pepper (any color)
1 minced garlic cloves
¼ chopped onion
¼ cup chopped tomato
1 cup frozen peas, thawed.
½ tablespoon soy sauce
1 teaspoon sugar
1 tablespoon Dijon mustard
2 teaspoon lemon juice
¼ teaspoon salt
¼ teaspoon ground black pepper
Finely chop the bell pepper. Heat oil in a pan, add bell pepper. Cook 3 to 4 minutes over medium heat until pepper is soft. Add garlic, onion and tomato, cook for 3 more minutes. Add the rest of the ingredients, boil, then turn down the heat and simmer for 5 minutes. Let some liquid evaporate, but if too dry add some water.
