Tofu Salad with Basil Peach Sauce

Refreshing summer salad, convenient and easy.

7 ounces soft or silken tofu (half block)
1 peach
½ tablespoon maple syrup
1 tablespoon chopped fresh basil leaves
Cut tofu into small cubes. Put in a serving bowl. Cut peach into chunks, discard pits. Mix peach, maple syrup and basil in a blender. Pour sauce over tofu. (Optional) Decorate with extra basil leaves.
