Paccheri alla Parmigiana is a classic recipe from the South of Italy, the basis for this recipe are fresh aubergines, tomato passata and parmesan cheese together to give life to a mouth-watering pasta dish. Pacheri are typical from Gragnano Area.

400g Gragnano Paccheri Pasta
750g Aubergines (purple ones preferably)
300g Breadcrumbs
150g Parmesan cheese
200g Sliced Caciocavallo cheese or an alternative such as Edam
750g Tomato passata
1 Onion
1 Clove garlic
2 tbspns Extra virgin olive oil
100g Black olives in brine (chopped)
Some Basil leaves;
Salt to taste.
