Amazingly Quick and Healthy Sweet Potato Soup (30 mins)

Amazingly Quick and Healthy Vegetarian Sweet Potato Soup. Impossible to get wrong, no matter the ingredients you have to hand! Perfect all year round.

1 medium onion
2 tbsp olive oil
1 bell pepper (yellow or red go well but any will do)
2 cloves garlic (0.5 tsp dried garlic)
2 cm ginger (1 tsp if using dried)
1 tsp dried cinnamon (or 1 stick)
1 tsp cayenne pepper
750 ml hot veggie stock
2 large sweet potatoes
Half a cup tomato puree or 1 cup fresh chopped tomatoes
2 large tbsp peanut butter (crunchy or smooth both work, or make your own in 5 mins here)
2 tbsp maple syrup (you can also use honey, but then it won’t be vegan of course)
2 tbsp soy sauce
2 tbsp vinegar (any sort, lemon juice can also be used instead)
Salt and pepper for taste
1 tsp pepper
½ lime, juiced (great if you have it, don’t worry if you don’t)

Dice the onions and throw them into the oil in a pot on low to medium heat. Let the onion cook slowly for about five minutes - it should begin to turn clear. Peel and the chop the sweet potatoes into cubes...
