Delicious and nutritious for a quick healthy breakfast or a mid-morning snack. These Applesauce apple muffins are moist and full of fiber. they freeze well and pack in lunch boxes for a healthy dessert alternative.

1 ½ cups whole wheat flour (can use gluten free flour)
½ cup unprocessed bran (can use flax meal for gluten free option)
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
? cup packed brown sugar
½ cup coconut oil (you can use canola)
¾ cup applesauce
1 egg
2 medium apples chopped fine
½ cup walnuts chopped (optional)
