A lighter healthier potato salad, then your mom used to make. You will love it!

1) 1 1/2 pounds baby potatoes, halved or quartered
2) 3 Tbsp Fresh coarsely Chopped parsley
3) 2 Cloves Garlic, finely chopped
4) 2 Celery Stalks, chopped
5) 6 Green Onions, chopped
6) 1 Tsp Lime Juice
7) 3 Tbsp Extra Virgin Olive Oil
8) Salt & Pepper to taste
