Baked Fries

Delicious, homemade, baked fries! Pretty simple, just make sure to watch them. Mine got a little over-baked so keep a close eye on those little babies! It's awesome to be able to feed my fry addiction at home now!

3 yukon gold potatoes, washed and cut lengthwise into even sized wedges
5 Tbsp olive oil
3/4 tsp kosher salt, plus more to taste
1/4 tsp black pepper, plus more to taste

1) Preheat the oven to 475? F
2) Place the potato wedges in a large mixing bowl
3) Cover with hot water and soak for 20 minutes
4) Spread 4 Tbsp of oil in rimmed baking sheet, coating the bottom evenly and set aside
5)Drain the potatoes
6) Spread the potatoes out on layers of paper towels or on clean kitchen towels and press with additional towels until dry
7) Wipe out the empty bowl and dry completely
8) Return the potatoes to the bowl and toss with the remaining 1 tablespoon of oil and salt and pepper
9) Place potatos in a single layer on the baking sheet
10) Cover tightly with foil and bake for 5 minutes
11) Remove the foil and continue baking for 10 minutes
12) Using tongs or spatula to gently flip each potato wedge (keep in single layer)
13) Continue baking until the fries are golden and crisp, about 10 minutes
* Rotate the pan as needed to ensure even browning
14) Transfer fries to a paper-towel lined plate to drain grease
15) Season with additional salt and pepper to taste
