These 20 minute Baked Lemon Poppy Seed Donuts are soft, fluffy, and bursting with fresh lemon flavor and poppy seeds! (gluten free, Paleo, with a vegan option)

8 donuts
3/4 cup almond flour
1/3 cup tapioca starch
3 tbsp coconut flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2 tbsp poppy seeds
2 tbsp coconut oil ( melted and cooled )
1 egg ( or 1 flax egg )
1/3 cup honey ( or maple syrup )
1/2 cup almond milk
1 tbsp lemon juice
1 tsp lemon zest
1 tsp vanilla
Glaze:
1/4 cup coconut butter ( warmed )
2 tbsp honey ( or maple syrup )
1 tsp lemon juice
