Baked Potato with Leek

Leek complements potato so well.

2 medium russet potatoes
1/2 leek
1 tablespoon olive oil
1 garlic clove, minced
¼ teaspoon salt
1/8 teaspoon ground black pepper
¼ cup water
Preheat oven to 400 degrees Fahrenheit. Peel and cut potatoes into big chunks. Cut leek into 1 to 2 inch segments, then cut vertically into halves. Place potato and leek in a baking dish with lid. Mix olive oil, garlic, salt, pepper and water, pour over potato and leek. Cover and bake for 30 minutes. Uncover and bake for additional 15 minutes.
