With winter right around the corner and the possibility of a White Christmas, you are surely going to want something to keep you warm. This Bean and Barley Soup with Spinach will do the trick. It will keep you warm on a cold winter’s night as it’s filled with very hearty and delicious ingredients. It’s also a real quick and easy soup too. Pair it with a nice salad and a big crusty piece of bread and you have got a delicious and comforting meal!

1 tbsp. olive or vegetable oil
3 large carrots, diced
3 celery stalks, diced
1 medium onion, chopped
1 (15 oz) can of diced/chopped tomatoes
1 (10 oz) pkg. frozen chopped spinach, thawed and squeezed dry
¼ cup barley
1 (15 oz) can kidney beans, rinsed and drained
4 cups chicken or vegetable broth
Salt and pepper, to taste
