There are lots of GF crust recipes using almond and coconut flour on the internet, but they aren't quite the same as a traditional pie crust and can be costly to make often. I've opted to use a crustless Quiche as my go-to recipe. Keep the filling and toss the crust! Not only is it yummy, but it keeps in the fridge for days and is low carb. The recipe below calls for bacon, shallots, broccoli and mushrooms but you can throw in any leftovers from the fridge and leave out the meat to ma

5-6 slices of bacon
6 TBL chopped shallots (or 1/2 an onion)
2/3 cup broccoli
1/2 cup mushrooms
6 large eggs
3/4 cup heavy cream
salt and pepper to taste
