Beetroot summer soup ('chlodnik')

This is a nutritious, refreshing and easy to make traditional Polish summer soup. It uses both the beets and beet greens so nothing is wasted:)

2 medium beets with greens

3 tablespoons lemon juice

1 and 2/3 cup water

750 ml natural yogurt

2-3 tablespoons dill, finely chopped

2 tablespoons chives, finely chopped

10 radishes, coarsely grated

Cucumber (15 cm long), peeled, coarsely grated

1 garlic clove, crushed

1 and 1/2 teaspoon sea salt, plus plenty of pepper

Serve with hard boiled eggs (optional)

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. It is simple to make, it is nutritious and absolutely delicious. Oh, Spanish tapas!! Aren't these simply the best?



6 large eggs
1 large onion I used red organic
3 med potatoes sliced or cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper or some chilli flakes/cayenne pepper
6 tbsp parsley fresh -chopped (optional)
