Berry Kale Salad With Lemon Dijon Vinaigrette

I adore this amazing Berry Kale Salad. It’s fresh, cool, and crisp, which is perfect for a hot summer day. Don't melt your face off this summer by turning on the oven when it's 90 degrees outside, eat this salad instead!

5 tablespoons olive oil
1 tablespoons lemon juice
1 teaspoon Dijon Mustard
1 garlic clove minced
Fresh ground sea salt to taste I did 1/2 teaspoon
5 oz of baby kale
1 cup of arugula big handful
5 ounces of walnuts
4 ounces of feta cheese either buy crumbled or cut into cubes if you buy the "feta chunk"
1/2 cup of blueberries
1/2 cup of raspberries
1 avocado sliced

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
