Fresh vegetables, thyme, and sage make this paleo + vegan Thanksgiving stuffing come alive! Full of robust flavor, it’s ready to go in 35 minutes!

1 head cauliflower, chopped
½ cup coconut oil, divided (2 tbsp, 6 tbsp)
1 cup sliced celery
1 cup sliced carrots (I used baby carrots)
¼ cup red onion, diced
4 cloves garlic, pressed
¼ cup green onion, chopped
1 tsp sage
1 tsp thyme
¼ tsp sea salt
2 bay leaves
