Brussels Sprouts and Quinoa Salad tossed with Pomegranates, pecans and coconut flakes and dressed with a honey orange vinaigrette. Its light and easy which makes for a fabulous side this holiday season

2 cups cooked Quinoa
1 lb Brussels Sprouts, diced thin
½ Pomegranate, seeded
¼ c. pecans, toasted
¼ c. feta (optional but delicious)
coconut flakes
¼ c. fresh squeezed orange juice
¼ c. extra virgin olive oil
2 Tbsp. honey
salt and pepper to taste
1 lb Brussels Sprouts, diced thin
