Butternut Squash Taco Trio

A filling that can be used to create three different healthy and delicious meals

1 Butternut Squash
Buttery flavor spray
Salt and Pepper (to taste)
1 Tbsp Olive Oil
1 C. chopped sweet onion
1 Tbsp minced garlic
1 can (14.5 oz can) black beans, rinsed and drained
1 C. frozen yellow corn, thawed and drained
3 Tbsp. Honey
3 Tbsp fresh lime juice
2 Tbsp Chopped fresh cilantro
Your choice of a potato-already baked, an omelette ready to fill and fold, or taco shells
Grated cheese
chopped cabbage
diced or sliced avocados
fresh pico de gallo
hot sauce
other favorite taco toppings
