Cajun Lemon Green Beans

Crunchy green beans with a great balance of spice and acidity. These beans will have guests demanding for more.

1/4 cup olive oil
1 pound fresh green beans, tops and tails broken off
1 tsp cajun seasoning
1/4 tsp salt
zest of 1 lemon
1 Tbsp lemon juice

In a large sauce pan, heat oil on medium to medium-high heat. When hot, add green beans. Cook until beans start to wrinkle, stirring occasionally, about 8 to 10 minutes. Then, add cajun seasoning, salt, lemon zest, and lemon juice. Continue cooking beans for another 8 to 10 minutes, stirring occasionally. Beans should still be crunchy.
