Healthy, low-carb "fries" and creamy dipping sauce

For Carrot Fries:

- 1 pound of carrots
- 1 tablespoon olive oil
- Salt
- Pepper
- Garlic powder
- Dried or fresh thyme

For Lemon & Garlic Aioli:

- ¼ cup mayonnaise
- 2 garlic cloves, minced
- Juice of ½ lemon
