Soup Pot Ingredients:
1 Tablespoon Olive Oil
1 cup Chopped Brown Onion
2 Garlic Cloves, finely Chopped
1 cup Brown Mushrooms, Chopped. I used Crimini or “Baby Portabellos”.
1 cup Chopped Carrot
2 Small or Medium Zucchini, Chopped
1 Red Bell Pepper, Chopped
1 teaspoon Smoked Paprika
1 teaspoon dried Oregano

4 cups Chicken Broth
or Vegetable Broth
1 cup cooked Quinoa
2 cups cooked Chicken , Chopped
2 teaspoons Worcestershire Sauce
2 cups Swiss Chard or Kale, Chopped
Juice of 1/2 Fresh Lemon

This delicious yet simple Zucchini Cake is made moist with fresh garden zucchini and walnuts. The warm spices of cinnamon, nutmeg and allspice along with a brown sugar cream cheese frosting take it over the top. I love to take this cake to potlucks and family functions as it is always a huge hit.

Zucchini Cake:
3 cups flour
1 cup sugar
1 cup brown sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
3 cups grated zucchini
1 1/4 cups vegetable oil
4 eggs
1 teaspoon vanilla extract
3/4 cup chopped walnuts

12 ounces cream cheese (1 1/2 boxes)

There is a cool way of getting all the juice out of your lemons. Quarter the lemons and put them in the bowl of your stand mixer with the paddle attachment. Use low speed to squeeze the lemons, then strain the juice directly into a measuring cup. A cool way to juice some lemons, right?
