Hearty veggies, quinoa and chicken with the added flavor layers of Worcestershire, Smoked Paprika, and Oregano is simply delish. One pot is all you need. Soup Pot Ingredients:
1 Tablespoon Olive Oil
1 cup Chopped Brown Onion
2 Garlic Cloves, finely Chopped
1 cup Brown Mushrooms, Chopped. I used Crimini or “Baby Portabellos”.
1 cup Chopped Carrot
2 Small or Medium Zucchini, Chopped
1 Red Bell Pepper, Chopped
1 teaspoon Smoked Paprika
1 teaspoon dried Oregano

4 cups Chicken Broth
or Vegetable Broth
1 cup cooked Quinoa
2 cups cooked Chicken , Chopped
2 teaspoons Worcestershire Sauce
2 cups Swiss Chard or Kale, Chopped
Juice of 1/2 Fresh Lemon
