Homemade cherry almond granola - healthier and tastier then the store-bought kind - and so easy to make!

4 cups rolled oats
1 cup almonds, sliced or coarsely chopped
1 cup unsweetened coconut
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 cup brown sugar
1/4 cup canola oil
1/4 cup honey
1/4 cup apple juice (or apple cider)
1 teaspoon vanilla
3/4 teaspoon salt
1 cup dried cherries
