Chicken Hash Chopped. A Choppedified version of an Ina Garten Original

What is Choppedified. I take a recipe and chop calories and cost with Chopped ingredients. I add lots of veggies but keep the flavor profile recognizable.

Baking Sheet Ingredients: I used two sheets so as not to crowd the veggies.
1/4 lb. Green Beans
1/2 Red or Brown Onion, Chopped
2 Medium Red Potatoes, Chopped
1 Red or Orange Bell Pepper, Chopped. I used orange because that’s what my produce section had today
1 Medium Sweet Potato or Yam, Chopped
1 Teaspoon Fresh or Dried Thyme
2 teaspoons Olive Oil
1 teaspoon Kosher Salt

Bowl Ingredients:
4 cups Chopped Spinach
1 Small Avocado, Chopped
2 Green Onions, Chopped
8 oz. cooked Chicken, Chopped
1/2 cup Chopped Fresh Basil

Chopped Style Dressing Ingredients:
2 teaspoons Olive Oil
2 Garlic Cloves, finely Chopped
4 Sundried Tomato Halves, packed in Oil, Chopped
1/2 teaspoon honey
Juice of one Lemon
1/4 teaspoon Smoked Spanish Paprika
1/2 teaspoon Fresh or Dried Thyme
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste
Baking Sheet Ingredient Prep: Chop’em and Drop’em onto the sheet/sheets. Drizzle with the Oil and sprinkle on the Thyme. Roast for 20 -25 minutes until caramelized. Let cool for a few minutes. If your...
