Years ago, in high school I discovered my love for cooking. I would raid my mom's few cookbooks looking for new recipes to try. This one I found in her Betty Crocker cookbook however after I moved halfway across the world, I no longer had the recipe handy so I made up my own recipe from the parts I could remember & voila Chicken Parmagiana was born! 1/2 cup bread crumbs
1/4 cup Parmesan cheese
1 teaspoon Italian seasonings
1 egg, whipped
2 chicken breasts or 4 chicken tenders
1 small jar spaghetti sauce
Olive oil
Mozzarella cheese
In one bowl, mix the bread crumbs, Parmesan, & Italian seasonings. In another bowl, whip your egg while heating your olive oil in a skillet. Also, start preheating your oven at 350 degrees. Take your [thawed] chicken and dip it first in the egg then in the bread crumb mixture. You may repeat if you'd like then place each piece of chicken into the oil once the oil is hot enough. Fry the chicken until the breading is a golden brown. Place each piece of chicken into a glass pan. Pour some of the spaghetti sauce right down the middle of the pan across the chicken. Then, sprinkle some mozzarella cheese across the spaghetti sauce. Last, bake in the oven for 20 minutes or until the chicken is done.
