Chickpea avocado and grapefruit salad with maple syrup

This salad is quick and simple (especially if you are using chickpeas from a can) and very nutritious. I love to combine fruits and vegetables in a salad – the fruit usually add sweetness which makes the salad more appealing to children especially (I know this from the frequent, constructively critical opinions from my own children!). The dressing also adds to the sweetness in this salad as it contains maple syrup.
1 avocado (peeled), sliced or cubed 1 and 1/2 tablespoons pure maple syrup
1 red grapefruit, peeled, cubed 2 tablespoons good veg. oil
1 cup chickpeas (cooked, or from a can) 4 tablespoons lime juice
1/3 cup pistachios, crushed zest of 1 lime
2 tablespoons finely chopped coriander
Salt and pepper to taste

Combine the dressing ingredients: maple syrup, oil, lime juice, lime zest. Set aside. Combine the salad ingredients and pour the dressing over it.
