Chipotle Vegetable Chili

This recipe for Chipotle Vegetable Chili is the perfect hearty meal to warm your soul in the cold winter months!

3 large carrots, chopped
4 stalks celery, chopped
1 large sweet onion, chopped
1-2 jalapeños, de-seeded and finely minced (for more heat, leave more seeds)
2 bell peppers, chopped
4 cloves garlic, minced (I use a garlic press)
16 oz black beans, drained and rinsed
16 oz kidney beans, drained and rinsed
1 and 1/2 cups sweet corn (I use Trader Joe's super sweet frozen corn)
28 oz crushed tomatoes
6 oz tomato paste
32 oz vegetable broth
3 tbls chipotle in adobo (I puree an entire can and then measure)
2 tbls chili powder
1 tbls cumin
2 bay leaves
1/2 tbls oregano
1 tbls salt
1/2 tsp pepper
oil for cooking (I use coconut oil)
