Chocolate Chipotle Chili

On my quest to find a great chili recipe, I created this. Don't be afraid of the chocolate - it just gives it a richer flavor!

2 lbs ground beef
1 large onion, chopped
2 red bell peppers, chopped
2 tablespoons garlic, minced
2 cans diced tomatoes with chipotle
1 can diced tomatoes (regular)
3 cans kidney beans, drained and rinsed
3 cups water
2 beef bouillon cubes
1 1/2 tablespoons brown sugar
1 teaspoon cumin
1 teaspoon Montreal Steak Seasoning
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
2 tablespoons unsweetened cocoa powder
1 can tomato paste
3 cans tomato sauce
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1/2 oz unsweetened chocolate, grated
