Chocolate Kale Muffins

Healthy whole grain muffins with the antioxidant powers of chocolate, orange, and even KALE! You won't taste this healthy ingredient, but it definitely adds a nutritional boost to breakfast and gets your family eating some greens.

~2 c kale, very finely chopped
1 large orange
¼ c unsweetened applesauce
¼ c sugar
¼ c brown sugar
1 ½ tbsp flax meal
? c unsweetened almond milk (or milk choice)
1 tsp vanilla
2 tsp baking soda
¼ c cocoa powder
1 ¼ c whole wheat pastry flour
¼ – ? mini dark chocolate chips (optional)
